Alligator Sauce Piquant
2 to 4 pounds alligator meat
1/4 cup margarine
One 16-ounce can tomato sauce
2 tomatoes (minced)
1 or 2 chil1 peppers
1 onion (diced)
1 cup celery (diced)
1 cup bell pepper (diced)
5 cloves garlic (minced)
1/2 cup mushrooms (diced/sliced)
4 cups water
1/4 cup onion tops (minced)
1/4 cup parsley (minced)
Seasoning (cayenne, paprika, Tony Chachere's & McCormick's Season-All)

Season the meat with lots of Tony's and McCormick's. Add cayenne and paprika if you can handle it. Melt butter in pot and saute meat, peppers, onions, celery, garlic and bell pepper until onions are wilted.nnAdd tomatoes, tomato sauce, and water. Cook at medium heat until oil rises to the top (about 1/2 hour).
Add mushrooms, onion tops and parsley. Season to taste, adding cayenne and salt if required, simmer for 15 minutes. Serve over rice.

freshly caught trout (I prefer brownies for this)
parbaked wheat pizza crust
whipped cream cheese
dill weed

Smoke the trout on your bbq then take all the meat off and set it aside. Spread cream cheese on the pizza crust. Spread the trout evenly over the top. Sprinkle with garlic, onions (I like to saute them first) and dill weed. Bake in 450 oven for 5 minutes. Cut and devour.

Thinly sliced catfish with a dash of greek seasoning,then dip into tempura batter is the way to go.You can also caot some sliced fresh jalepeno's and squash and you've got a fine healthy meal to die for.

2# catfish ground
1 cup italian bread crumbs
salt and pepper to taste
2 eggs
2 Tblsp red onion finely chopped
1 jalepeno finely chopped
cast iron skillet and peanut oil
extra bread crumbs to dredge

Mix all ingredients together and make into patties.Dredge the patties in more bread crumbs,then fry to golden brown on both sides till done.Serve with fries and puppies.

FRESH TUNA SASHIMI A LA CORONA! No cooking required, as long as you have beer or liquor...no problem! Email me (helmer_d@hotmail.com), if you want to know how to cut your tuna to this...and remember, "don't drive when you drink...or else your beer will spill"...enjoy!

another yet great one for the wall
its called chipper fish
take a cooking pan
fish of your choice.....bone out of course
pre cook fish in salt water till floating then let cool and put into greesed pan broken up
take chips of your choice crushed up fine
and put over top add seasoning but not much .....no salt ...fish and chips in there are salty enough
then throw cheese ontop and bake for a few really is a good one

CatFish not filayed off the bones
on the BBQ a squeeze of lemon dash of salt and pepper and wiped all over with a hand full of minced garlic mmm
