RECIPES TO TRY.......CLICK ON NAME FOR RECIPE IN FULL PRINT

Seafood Stew.docFish Cakes
1 pound of steamed pike, walleye or fish of choice, i like to add more
1 box of stuffing mix
1 cup of shredded cheddar cheese ( or cheese of choice)
1/2 cup of grated carrot or zucchini seeds removed
1/3 cup of mayonnaise
1 to 3 tablespoons of sweet pickle relish
3/4 cup of water
1/2 to 1 teaspoons of Old Bay or seafood seasoning of choice

Mix the cheese, carrots or zucchini, mayonnaise, relish, seasoning and water together well then add the stuffing mixing again and fish last. Cover and refrigerate for at least 10 to 15 minutes. Form patties lightly.

Heat a large skillet sprayed with nonstick spray to medium heat and cook patties to a golden brown about 4 minutes each side. Enjoy.....
Can use can Tuna or crabmeat also.....


Tartar Sauce

1/2 - 3/4 cup mayonnaise
1/4 cup horseradish sauce ( give or take to your taste)
1/4 tsp. garlic powder
1/4 tsp. onion powder
1 tbs. parsley
3 - 5 tbsp. pickle relish
splash or two of lemon juice
pepper to tastle

Mix all ingredients together and use with any fish sandwich or blackened fish or seafood of choice.

Okay....I get it now, you do them on the grill and it sounds great. We do our salmon on the electric pancake grill with old bay and garlic but I will have to try this on the BBQ grill with the lemon pepper spice. Thanks for sharing.

No BBQ sauce. For those that haven't done this before, here goes. First smash 1-2 cloves garlic. Next melt aprox. 4 tblsp. ( or desired amount) of butter in small skillet (preferably cast iron). Add garlic and several dashes of lemon pepper. Turn off heat. Place a double sheet of T-foil sprayed w/Pam on the grill. Place salmon fillet "skin side up" on foil. Cook on medium till skin removes easily with tongs (aprox 5 min). Remove skin with tongs and discard. Turn fillet with spatula. Pour butter/garlic mix on fillet and cook till fillet flakes easily with fork (aprox. 2 min). That's it! I cook the steaks at the same time according to the same instructions but I save them for the next day and use them according to Robin and Brians Fishcake Recipe. Easy Squeezy Lemon Peasey!

Greetings all! Just want to add that I use a similar recipe to the one at the top of the page when I catch a salmon. We barbq the entire fish in lots of butter, garlic, and lemon pepper. We eat the fillet with rice the first day and next day use the steaks in a fish cake recipe. Can't decide wich is better!

Heres a recipe for Halibut.
1/2 can of beer
1 cup of flour
1 egg
1 teaspoon of any steak seasoning
1/8 cup milk
Mix all together with fork
Batter 1 stripe and deep fry in very hot oil until golden brown
Dip in hotsauce or mayonnaise/hotsauce mix

When it comes to fish, simpler is better. I like it either fried up in a simple batter with some tartar sauce or grilled in aluminum foil with salt, pepper, and lemon juice.
